
Banana-Nut Bread
This is delicious banana bread bursting with banana flavour, plenty of moisture and a beautiful light texture. There is no need to take out the beaters, this recipe is quick and easy to make. I have made it a few times since I discovered it because we love it so much. The first time I made it kind of like a Christmas cake or fruit cake embellishing it with cherries, currants, chocolate chips and walnuts (1/4 cup of each). It tasted great and it is as close to fruit cake as I want to get!
The second time I made classic banana bread with walnuts. I wanted to keep it simple. My parents and I enjoyed it for breakfast with green tea. I had to hide the loaf near the end of the day because it was disappearing quickly and I wanted my husband to enjoy this version.

This is super healthy banana bread made with 100% whole grains, loads of sweet, delicious fruit that’s responsible for the majority of its sweet taste. There is no need for large amounts of added sugar.
This recipe is flexible and add in varieties are endless – dark chocolate, dried fruit or nuts.
This recipe is definitely worth making over the holidays. A great tasting breakfast or snack option.
Ingredients:

3 over-ripe bananas
2 tbsp lemon juice (juice of 1 whole lemon)
½ cup unsweetened apple sauce
1/2 cup brown sugar
2 cups 100% whole grain flour
3/4 tsp baking powder
3/4 tsp baking soda
½ tsp vanilla bean
1/2 tsp. salt
½ cup walnuts, chopped
Cinnamon to sprinkle on top (optional)
1. Preheat oven to 350 F. In a large bowl, mash the bananas and add the apple sauce, lemon juice and sugar. Stir well until combined. Mix together the dry ingredients and add them to the banana mixture and stir until just combined.
2. Grease or line loaf pan with parchment paper. Spread mixture evenly in the pan, sprinkle with cinnamon and bake about 50-55 minutes or until a toothpick or knife inserted in the center comes out clean.
Note: You can also add cherries, currants, chocolate chips, coconut, almonds, pecans, pumpkin seeds etc. …whatever you desire! Can make muffins out of this recipe as well, just adjust cooking time.

Walnuts are extremely nutrient-dense (lots of antioxidants!).
