
This has to be one of the best recipes I have tried for banana soft serve, which originated at Choosing Raw. I found this recipe at Oh She Glows and wanted to share it with all of you. Chia seeds offer an abundance of fiber, omega fatty acids, vegetable protein, antioxidants, vitamins and minerals – providing a well balanced source of energizing nutrients! I made this for my love (husband) and he raved about it, so much so I’m making it again today J It is so creamy and rich with the almond butter and chia. The chia seeds also give it a little crunch. It reminds me of a blizzard, but its GOOD FOR YOU in every way. It is simply indulgent.

2 frozen bananas, in chunks
2 Tbsp almond butter
2-4 Tbsp almond milk
1 Tbsp chia seeds
1. Put frozen banana chunks in food processor and process until smooth. Will have to stop a couple times to scrape the edges and break apart the clump.
2. Once smooth, add almond butter, almond milk and chia seeds. Mix until combined well. Serves 2 portions.
Note: You may adjust the amount of almond milk to give you the consistency you like.

Chia Seeds
You might recall Ch-Ch-Ch-Chia, same seeds, but i wouldn't eat those ones.
The Chia seed (Salvia hispanica), is a relative to the mint family and was cultivated and eaten by the Aztecs for strength. It was a staple food, along with corn and beans. These seeds are small ovals (1mm diameter), mottle-colored with brown, gray, black and white. The soaked seeds are gelatinous and absorb 10-12X their size. They add gel texture to porridges, puddings and whatever else you decide to use them in. Chia seeds are pretty tasteless, so can be added to most dishes without upsetting the flavour.
They may be eaten raw as a whole seed and can be added to breads, salad, cakes, cereal, shake, juices, puddings etc. Chia seeds are an excellent vegetarian source of omega fatty acids. The omega fatty acid content is even greater than flax! (however, keep eating flax as well because it offers other benefits – contains lignins (fats) that help battle conditions caused by hormone imbalances, such as PMS or hot flashes). Chia seeds contain no gluten.
Chia seeds contain an easily digestible form of vegetable protein and are full of fiber, vitamins, minerals and significant levels of antioxidants (chlorogenic and caffeic acids, myricetin, quercetin, and kaempferol flavonols). It contains 20% protein, 25% dietary fiber and 34% oil (which contains a very high concentration of omega-3 fatty acid at 64%. It offers us phosphorus, manganese and trace levels of sodium.
One ounce of chia seeds contain 11 g of fiber, 4 g of vegetable protein, 9 g of fat (“good” fat) and 180 mg calcium.
Chia seeds are an amazing food that provide a well-balanced source of energizing nutrients!
